Iberofest presents a fine dining experience that honours the principals of zero waste cooking and sustainable consumption. The dinner will be prepared by Spanish chef Albert Franch Sunyer in cooperation with Estonian Chef Peeter Pihel and with the help of the teams from restaurants Nolla (Helsinki) and Ö (Tallinn). The one one-night-only dinner event will be Spanish themed and presents a taste of Albert’s roots, but at the same time the chefs will be using local products of Estonia and following the waste-free ideology.

Originally from Barcelona, Albert Franch Sunyer has worked in many Michelin star restaurants and currently resides in Helsinki, where he has worked in several prestigious restaurants like Chez Dominique, Olo and lastly as chef in Grön, Helsinki’s Restaurant of the Year 2017. He is co-founder of restaurant Nolla, the first zero waste restaurant not only in Finland, but in the Nordic countries. The idea of a zero-waste restaurant was born out of his frustration in the wastefulness of the restaurant industry. The restaurant offers experiences based on the best, local and organic products, without waste. Albert always works with local and seasonal ingredients produced by small local producers and avoids the use of packaging.

The menu will be created in cooperation with the renowned Estonian chef Peeter Pihel who has become the spokesperson of the zero waste principals in the restaurant business in Estonia. Peeter Pihel gets his creativity from the heritage of being born in an island. He uses to say “When you lack ingredients, you need to use your imagination”. And he’s done it well: after four Restaurant of the Year awards on his back from Pädaste Manor, he moved to work for the best restaurant in Sweden, Fäviken Magasinet. Nowadays you can find Pihel at the kitchen of Kotzebue Bakery & Charcuterie in Tallinn. For him, zero waste cooking is an ode to local produce, grown lovingly on small farms, and honouring the principles of sustainable and benevolent consumption.

Together they will join forces with the team of restaurant Ö, which focus also on using the freshest seasonal ingredients of local origin. The guests will enjoy a high quality fine dining experience while also embracing a greener economy, sustainability and more mindful use of the resources.

The dinner is open to public with limited seats and tickets can be purchased beforehand for the price on € 50.
